Hot spiced pineapple juice

Appetisers and Savouries: Hot Spiced Pineapple Juice

A 15oz (450ml) can of pineapple juice; 2 level tblspn sugar; 1 tblspn lemon juice; 1 X 2” (5cm) cinnamon stick

Simmer all the ingredients together for 10 minutes, remove the cinnamon stick and pour the juice into glasses.

Lime, Poppy and Pineapple Syrup Cake

Ingredients:

125 g softened butter; ½ cup caster sugar; ¼ cup Rose's Lime Marmalade; 2 eggs, beaten; 1 ½ cups self-raising flour ; ½ cup Golden Circle Pineapple Juice or Golden Circle Pine Coconut Fruit Drink ; 2-3 Tbsp poppy seeds

Syrup:

½ cup Golden Circle Pineapple Juice or Golden Circle Pine Coconut Juice; ½ cup caster sugar

Method:

1. Preheat oven to 180°C. Grease and line a 20 cm round cake tin.

2. Cream butter and sugar until light and fluffy. Add the Rose's Lime Marmalade and beaten eggs. Fold in sifted flour alternately with the Golden Circle Pineapple Juice and lastly stir through the poppy seeds.

3. Spread the mixture into the cake tin and bake for 40-50 minutes. In a small saucepan place the syrup ingredients and bring to the boil and simmer for 1-2 minutes.

4. When cake comes out of the oven pour the hot syrup over the hot cake while still in the tin. Remove from cake tin when cool.

Pineapple and marshmallows for dessert

Mount Magnet Marshmallows

Serves 3 - 4

440g can crushed pineapple, drained; 150g sour cream; 125g marshmallows, halved; 310g can mandarins (optional)

Place the pineapple, sour cream and marshmallows in a mixing bowl and combine.

Stir in the mandarins (if using).

Refrigerate overnight.

Serve cold.

Chocolate fudge with caramelised pineapple

This recipe answered all fudge requirements – rich and chocolaty, crunchy, sweet and sticky ! 

I made slice, and also a cake which transformed itself into a birthday cake!!

First of all – dice ½ fresh pineapple and sauté in butter and brown sugar, save for decoration! Anne 

Note: Brookies are rich, fudgy and decadent bars made with half brownie and half chocolate chip cookies.

Flourless Fudge Brookies


3 cups icing sugar mixture; 3/4 cup cocoa powder; 1/2 tsp salt; 4 egg whites; 1 tsp vanilla extract; 1/2 cup choc chips

Preheat the oven to 180˚C.

Line a shallow rectangular lamington pan or similar with baking paper.

In a large bowl, whisk together the icing sugar, cocoa and salt. Stir in the vanilla and egg whites.

Whisk until the batter is just moistened then stir in the choc chips.

Pour the batter into the lamington pan and bake for 20 - 25 minutes until the top is glossy and cracked.

Let your brookie cool before lifting it out of the pan and cutting it into squares. Serve with a scoop of vanilla ice cream for a decadent mid-week dessert.

Pineapple Delicious Pudding

Desserts and Puddings: Pineapple Delicious Pudding

35g (1 1/4oz /1/4 cup) self-raising flour; 1/4 tsp salt; 110g (4oz/1/2 cup) sugar; 2 eggs, separated; 125ml (4fl oz/1/2 cup) milk; 65g (2oz/1/4 cup) crushed, drained pineapple; 60ml (2fl oz/1/4 cup) pineapple juice

Sift flour, salt and sugar into a bowl.

Beat egg yolks and add to the flour mixture with milk, lemon juice and crushed pineapple and juice, and mix well.

Fold in stiffly beaten egg whites.

Pour into an ovenproof dish and stand the dish in a roasting tin of water. Bake in a preheated moderate oven (180°C/350°F) for about 40-45 minutes or until set.

Serve with cream or ice cream. Serves 4.
