Pineapple Marshmallow

Day to Day Cookery for Home Craft Students Compiled by I. M. Downes Australia 2nd Edition

Pineapple Marshmallow    
1 small can pineapple slices; 1 tblsp spoon flour; 2 tblsp spoon gelatine; 350ml water; 1/3 cup sugar; Jelly, cherries & blanched almonds

1. Drain juice off pineapple slices.
2. Arrange slices in a glass bowl.
3. Fill holes with glace cherries.
4. Measure juice & make up to 450ml of liquid with water.
5. Place sugar, flour & gelatine in a saucepan & mix well together.
6. Add juice, blend well & stir over the fire until boiling.
7. Pour into a large bowl & when cool whisk until light and fluffy.
8. Pour over pineapple.
9. Allow to set then turn out onto a plate & decorate with chopped jelly, cherries & nuts.

A Kelvinator recipe for better pineapple

Kelvinator Recipes for Better Living Australia (These recipes came in a booklet with the fridge bought by Ann’s family in 1956)

Pineapple Mint Sherbet 

1 cup water; 1 cup pineapple juice; 1 tbls chopped fresh mint; 1 tblsp lemon juice; 1/2 cup sugar; 1 cup pineapple, crushed; 2 egg whites

Combine the water, pineapple juice, chopped mint and sugar and boil 3 minutes. Chill, add the crushed fruit, and lemon juice, tint pale green. Freeze 1 hour. Turn into a bowl, add the beaten egg whites and whip until very light. Return to the trays of the refrigerator and feeeze. Serve in chunky pieces as a refreshing summer sherbet.

It's always a bit risky suggesting I tint anything . . . "pale" is not in my dictionary, Anne.

Loafing with pineapple

The Australian Women’s Weekly Cookery Book, Prize recipes from our £2,000 Cookery Contest, 1948

Hawaiian Fruit Roll    
One cup pineapple juice (fresh or tinned), 1 cup dates, ¼ cup honey, 2 tblsp margarine or butter, 1 egg, 1 ½ cups flour, 2 tsp baking powder, ¼ tsp salt, 1 cup chopped nuts
Place pineapple juice and chopped dates in saucepan, simmer gently until thick. Cream honey with margarine or butter, add beaten egg. Fold in sifted dry ingredients, date mixture, and nuts. Turn into greased tin, 25cm X 10cm X 7.5cm, bake in a moderate over 200°C approximately 1 hour.

Pineapple and Cherry Loaf 

Preparation time: 35 mins.

Cooking time: 1 ½ hours

Ingredients: 175g glacé cherries; 40g glacé pineapple; 75g ground almonds; grated rind of half lemon; 175g butter or margarine; 175g caster sugar; 3 eggs; 75g self-raising flour; 75g plain flour; pinch of salt

Grease a loaf tin, 10cm by 23cm (top measurement); line with buttered greaseproof paper. Wash and dry the cherries, cut them in half and set 10 aside. Chop the pineapple and mix with the cherries, ground almonds and lemon rind.

Beat the butter until soft, then add the sugar, and cream the mixture until light and fluffy. Beat the eggs before adding them to the mixture a little at a time. Sift and fold the flours and salt, a third at a time, into the creamed mixture. Lastly fold in the fruit.

Spoon into the prepared tin, level the surface and arrange the reserved cherries on top. Cover the tin loosely with kitchen foil, taking care that it does not touch the cake mixture. Bake in the centre off an oven pre-heated to 180°C for about 1 ½ hours or until well-risen and firm to the touch. Cool on a wire rack and remove the lining paper.

Ladies Who Lunch, Easy, elegant recipes for brunch, lunch or dinner by Ann Reed and Marilyn Pfaltz 1972  USA 
Pineapple and Walnut Bread  
2 cups sifted flour; 3 tsp baking powder; 1 tsp salt; ½ tsp baking soda; ¼ cup butter, softened; ½ cup sugar; 1 ½ tsp vanilla; 1 egg; 1/3 cup finely chopped dates; ¾ cup finely chopped walnuts; 1 can (450g) crushed pineapple drained
Preheat oven to 180°C.  
Sift flour, baking powder, salt & baking soda together. Cream butter with sugar & vanilla. Add egg, beating until light & fluffy. Add dry ingredients. Stir in dates, walnuts & drained pineapple. Pour into greased 23cm x 12cm loaf pan. Bake 1 hr. or until a toothpick inserted into loaf comes out clean. To freeze: let cool & wrap securely in foil. Yield: 1 loaf.

Donna's Pineapple Scrolls

I received this text and mouthwatering photo from Donna today, Anne.

"I made these afternoon treats for the kids using pineapple jam. They were awesome! Just puff pastry in strips, twisted and rolled up to make a cup. Filled with jam and baked. Mmm! And we drizzled runny plain icing over them. Wicked!" Donna.

Donna's family are expert in sign language, here's her beautiful daughter Gabi saying "pineapple"!

Menus are suggested for occasions such as a “Bicycle Picnic for Two”, “Picnic when Mother has had a Hard Day”, “After a Morning of Strenuous Play”, “Sunday Buffet to Show Off Something New”,  “ ‘The Gang’ in after a Square Dance”, ”The Sewing Circle Listens to the Opera”, “When You’ve Worked Too Late on a New Dress”, “A Bang-up Barbecue at a Pool”, “When the Junior-Senior Prom Committee Meets”, “The Scouts Plan an Overnight Hike”.

Chicken Hawaiian; spoon bread; barbecued fresh ham; zucchini or crooked neck squash salad; pineapple slices topped with orange sherbet; chocolate chip ginger caked; ice cold Coca-Cola

Chicken Hawaiian
¼ cup chopped onion; ¼ cup butter or margarine; 6 cups soft breadcrumbs; 1 tspn salt; 1 ½ tspn poultry seasoning; few grains pepper; ½ cup drained crushed pineapple; ½ cup shredded coconut; 2 broilers – not split
Brown onion in butter or margarine; mix with crumbs, salt, poultry seasoning and pepper. Add pineapple and coconut. Place filling broilers; truss. Spread with butter or margarine. Place broilers in roasting pan. Roast in moderate oven 170°C 40-45 minutes per 450g. Baste chickens occasionally with drippings in pan. Yield 8 servings.

Coca-Cola all evening, served ice cold right in the bottle; chilli con carne; corn bread; pumpernickel; pear and pineapple salad; creamed mayonnaise; cheese cake

Family Fun Room: Menu for The Husbands have gone to Rotary
Ham roll-ups; sardine fingers; special fruit salad; peanut cookies; chocolate fingers; molasses jumbles; bottles of ice cold Coca-Cola, in quantity

Special Fruit Salad
1 No 2 ½ can peach halves; 1 No 2 can pineapple chunks; 1 No 2 can grapefruit and orange sections; 1 large eating apple; lemon juice; lettuce; tarragon vinegar; French dressing; 1 can whipped cream; thin lemon slices

Drain syrup from peach halves, pineapple chunks, grapefruit and orange sections.; chill fruit. Peel apple, core; cut in thin slices; sprinkle with lemon juice. Line salad bowl with lettuce, arrange fruit in bowl, sprinkle with tarragon vinegar. Add enough French dressing to moisten. Garnish with salted whipped cream and lemon slices. Yields 10 servings.

Ann's pineapple jelly moulds

Ann recently found tiny rabbit and pineapple moulds in an antique shop and developed these recipes especially. Ann made the bunnies and I made the pineapple blancmanges with the addition of a little glace ginger, Anne. 

Pineapple jelly moulds

Ingredients: 1 pineapple Aeroplane jelly; 1 tub yoghurt (185 – 200g) (honey, apricot, vanilla and lemon flavours all work); 1 cup boiling water

Method: Dissolve jelly in boiling water
Cool to room temperature
Stir in yoghurt
Pour into lightly oiled moulds
Turn out when set

Pineapple Blancmange

Ingredients: 1 cup milk; 1 tblspn sugar; 2 tblspn cornflour; 2 tblspn dried or glace pineapple chopped; 2 tblspn pineapple juice; 2 tsp lemon juice

Method: Heat milk
Mix sugar, cornflour, pineapple and lemon juices together in a cup
Stir into hot milk, whisking until smooth. Return to heat and simmer for 1 minute
Add pineapple
Pour into lightly oiled moulds
Turn out when set

Ann presented me with this wonderful cushion she made from a piece of cross stich embroidery she came across in an op shop and some vintage velvet, thanks Ann, I love it.

Pineapple Lassi

Pineapple Lassi 

“The perfect refresher on a summer day.”

½ cup yoghurt; ½ cup unsweetened pineapple juice; 1 banana; ½ cup ice; ¼ tspn nutmeg; honey to taste (optional)

Process in the blender until the ice is broken up and the consistency is smooth. Add a couple more cubes of ice if you prefer a thinner, icier shake. Enough to serve three.
