Pineapple the Carnation Milky Way

Carnation Cookbook, Sydney 1976



Sausage and Pineapple Patties
Serves 4
500g sausage meat; 425g can crushed pineapple, well drained; 1 small onion, finely chopped; 2 tblsp chopped parsley; 2 tblsp plain flour; 2 tsp salt; ¼ tsp pepper; seasoned flour; Carnation Evaporated Milk; dry breadcrumbs
1. Combine sausage meat, pineapple, onion, parsley, flour and seasonings, mixing lightly but thoroughly.
2. Divide into 12 portions. Shape into patties.
3. Roll in seasoned flour, shake lightly to remove excess, then dip in evaporated milky breadcrumbs.
4. Place on a greased baking sheet.
5. Bake in a moderate oven 180°C for 25 minutes or until golden brown.
6. Serve with Hot Tomato Sauce.

Jelly Whip Parfaits
Serves 6-8
1 packet jelly crystals; 1 cup boiling water; 1 up Carnation Evaporated Milk, chilled icy cold
1. Dissolve jelly crystals in boiling water, cool until consistency of unbeaten egg whites
2. Whip chilled evaporated milk until thick, add jelly mixture and continue beating until thick
3. Pour into parfait glasses or a wetted 4 cup mould.
4. Set in refrigerator.


Variations: 
Chocolate Pineapple Whip: To a jelly pineapple jelly whip, fold in 425g can well drained crushed pineapple. Layer in tall glasses with crushed chocolate biscuits.

Cream Orient: Substitute juice from a 425g can pineapple pieces for water. Lastly fold in pineapple pieces, ½ cup pipped, canned or stewed cherries and ½ cup chopped walnuts.

Pineapples for Peace

A great website I came across recently unites recipes from Israel and Palestine.

‘Palestinian and Jewish Recipes for Peace: Celebrating 12 years of sustained relationship-building and outreach’ was put together by the Jewish-Palestinian Living Room Dialogue Group of San Mateo County, California 2004.
There was even a recipe for Hearty Corn Muffins which used pineapple.
Here are some more recipes that I've found. They were all delicious!

Ingredients: 75ml / 3/4 cup low-fat plain yogurt; 80g/ 1 cup peach chunks, pineapple chunks or papaya; 2 teaspoons toasted wheat germ
Method: Place the fruit in a small bowl. Dollop the yoghurt over and sprinkle with wheat germ.           
Serve!
Palestinian Fruit Soup by Dienia B.

Ingredients: 2 orange (peeled) ; 2 stalks rhubarb (cut up) ; 4 slices fresh pineapple ; 1 cup strawberries ; 1 cup cherries (pitted) ; 6 cups water ; 1 cup honey ; 1 tsp salt ; 1/2 tsp cinnamon ; 2 tblspn lemon juice ; 1 cup sour cream
Directions:
1  Combine all the ingredients except sour cream.
2  Simmer about 30 minutes.
3  Purée.
4  Chill.
5   Add sour cream before serving.

Pineapple Tapioca Cream
Serves 4   10 minute cooking time
1 egg, separated; 2 cups scalded milk; 5 tblspn tapioca; pinch salt; 3 tblspn sugar; ½ tspn almond extract; ½ cup crushed canned pineapple, drained; whipped cream; chopped nuts
Lightly beat egg yolk, add milk, then stir in tapioca, sugar and salt. Cook for 10 minutes, stirring constantly, then remove from heat. Beat the egg white until stiff and gradually stir into tapioca; cool. Add crushed pineapple and almond extract and chill. Serve topped with cream and nuts.
Tzimmes
Tzimmes is any kind of sweet stew. It usually is orange in colour, and includes carrots, sweet potatoes and/or prunes. A wide variety of dishes fall under the heading "tzimmes."
1 can of pineapple tidbits in pineapple juice
3 large carrots, peeled and cut into large slices
Additional pineapple juice or water if needed

The Nago Pineapple Park in Okinawa, Japan.

A theme park based on everyone’s favourite fruit!
What an amazing holiday destination – it has it all, but, mostly pineapples!

The Restaurant Palm Tree section boasts an extraordinary Pineapple Parfait. Here’s a diagram which incorporates a remarkable array of ingredients in all its 37cm glory !! Dieters beware! They must employ a very adventurous home economist at this pineapple park!

My adventurous daughter, Ella, decided she too could create such a mistresspiece! 



We couldn't find pineapple shaped biscuits so substituted with teddy bears.
Almost there!


She was determined to reach the 37cm mark!

At this theme park you can drive around in cute little pineapple shaped carts to check out the plantations or stand next to a funny pineapple shaped personality!

It is also home to the First Pineapple Winery in Japan. You can taste “Lagrima Del Sol” (Spanish for “Tears of the Sun”) made from 100% fresh pineapple juice. You can even bottle your own with an original label!

They state “Our low alcohol kids wine is very popular with the ladies” ! !!!

I think the highlight for me would be the souvenir shop!
