Brie's Baked Pineapple and Spam


Brie shared her recipe for Baked Pineapple and Spam with us on Oahu and I couldn't wait to try it out when I got home. We enjoyed it so much we thought we may buy some more Spam - a much loved staple in Hawaii!


It's easy too - slice and layer some Spam in a dish. Cover the Spam with a mixture of crushed pineapple (with the juice), mustard and brown sugar (about 2 tblspns of each). Then bake in a moderate oven for about 10 minutes.


I served ours up with salad. 



I found proof of Hawaii's love of Spam in Walmart! This cookery book!

And I read in "101 Things to do in Oahu" : "One of the most interesting gastronomical finds is the prevalence of SPAM - Hawaii's residents consume the most of this canned meat per capita in the United States. In fact, there's a whole festival, SPAM JAM, based on everything Spam."

This annual street festival occurs in April and benefits the Hawaii Foodbank, the largest non-profit in Hawaii that feeds the needy.


Yes, this is a real product - Spam flavoured macadamia nuts!!!

Cooking for beach boys!

How many beach boys you know love Brussels sprouts? Not many I’ll bet! How did Ruby come up with the name for this recipe ?

Beach Boy Lunch.
For each serving you’ll need 2 tblspns Golden Circle Sweet-Sour Sauce, 1 tblspn butter, 1 thick slice cooked ham, boiled bacon or canned luncheon meat, 1 serving cooked buttered Brussels sprouts, 1 cup cooked rice and drained Golden Circle Pineapple Pieces for garnish.
Melt butter in frypan and lightly brown the slice of ham or luncheon meat. Spread with the Sweet-Sour Sauce and add pineapple pieces. When bubbling hot serve with a hot buttered green vegetable and hot fluffy rice.

Mmmmmm, Spam.

A terrifically useful tip from Ruby Borrowdale in the ‘Golden Circle Tropical Recipe Book’:
“Improve the flavour of boiled tongue by adding a teaspoon each of whole cloves and whole peppers, two bay leaves and a diced onion to the cooking water. Serve slices with Golden Circle Pineapple.”

Family Salad.
2 X 440g cans Golden Circle Sliced Pineapple, 440g can Golden Circle Beetroot, luncheon beef or camp pie, lettuce, carrot, hardboiled eggs, tomato, cheese, onion, cooked green peas, potato salad, celery.
Arrange sliced luncheon beef or camp pie in the centre of a lettuce lined platter. Pile grated carrot each end and rim with sliced eggs. Arrange sliced tomato along sides, garnish with cheese shapes, onion rings and peas. Drain pineapple, mounting slices in pairs round four sides of mound of potato salad. Make “nest” in top with celery curls and fill with chopped beetroot.


What could be a better location to enjoy a can of Spam than the Hawkesbury River!
