Pineapple Dandy Biscuits

Bandon Grove School Building Centenary Cookbook 1882-1982 reprinted in 2016 to celebrate the “Back to Bandon Grove School Gathering”, NSW




Dandy Biscuits (recipe contributed by Batty Mate, nee Barnes)
1/4lb/125g margarine or butter; 1 tblsp hot water; ½ tsp carb soda; small cup sugar; sultanas, dates or nuts optional (glacé pineapple absolutely essential!); 1 tblsp golden syrup; 1 1/3 cups S R flour; 1 cup coconut; 2 crushed weetbix
Method: Place butter, golden syrup, hot water and melt together. Mix S R flour, carb soda, coconut, sugar and weetbix and fruit/nuts. Stir altogether and roll in small balls, flatten with fork. Bake mod. Oven 10-15 mins
