Pineapple Marshmallow

Day to Day Cookery for Home Craft Students Compiled by I. M. Downes Australia 2nd Edition





Pineapple Marshmallow    
Ingredients:
1 small can pineapple slices; 1 tblsp spoon flour; 2 tblsp spoon gelatine; 350ml water; 1/3 cup sugar; Jelly, cherries & blanched almonds

Method: 
1. Drain juice off pineapple slices.
2. Arrange slices in a glass bowl.
3. Fill holes with glace cherries.
4. Measure juice & make up to 450ml of liquid with water.
5. Place sugar, flour & gelatine in a saucepan & mix well together.
6. Add juice, blend well & stir over the fire until boiling.
7. Pour into a large bowl & when cool whisk until light and fluffy.
8. Pour over pineapple.
9. Allow to set then turn out onto a plate & decorate with chopped jelly, cherries & nuts.

  1. The flour is curious, isn't it. Would normal flour thicken something like cornflour does - or is there some other chemical magic going on here? It sounds delicious.

  3. I too am looking for this. I used it at school and my copy went missing somewhere along the way. It has heaps of good recipes which were deleted from the later editions. i would love a photocopy or even a scan of the book. Thank you in advance. Deb

  8. OMG Is this the only place to find this book? :)
    I think my copy was beaten up and my mum threw it out when I went to Uni.
    Is there any chance I could also grab a scanned copy?
    If not thanks anyway, IF it is possible, tat would be awesome.
    (I am signed in as my husband- cos that's how it works atm.)

  16. Hello. I’m so happy I’ve found you. Thank you for you time and dedication to your craft. It’s women like you that keeps our village together 🥰. I had this cookbook in school also. It was a hand me down and in pounds and ounces that I had to convert to decimal to work out my recipes I wanted to use. Although most of the recipes were in cups etc. I used that book for years and grew my children on these recipes throughout there childhood. Sadly I gave misplaced it and cannot find it. Although I never seem to stop looking for it. I think it must have got left between the newspaper one morning and maybe thrown in the bin 😩.   18. I can not believe how many of you were looking for this book . I have started the ball rolling by asking for it originally. I moved to Townsville from Europe as a 13 year old and this was required for our Home Economics class. I learned to cook from this book and to love my new home country’s food. So thankful to Pineapple princesses for original posting and their generosity in sharing. ❤️
