Date and Pineapple Loaf
Ingredients: 1 ½ cups (250g) chopped dates; 450g can crushed
pineapple; 125g butter; ½ cup castor sugar; 2 eggs, lightly beaten; 2 cups self
raising flour
Method: Grease 15cm X 25cm loaf tine, line base with baking
paper. Combine dates, undrained pineapple, butter and sugar in a saucepan
stirring constantly over heat without boiling until butter melted. Bring to the
boil, reduce heat, simmer uncovered for 3 min without stirring. Cool.
Stir in eggs then sifted flour in two lots. Pour into
prepared tin. Bake in moderate oven for one hour. Stand for ten minutes before
turning out on to wire rack to cool.
