Quiche with pineapple !

Thanks for the idea for lunch, Vicky.

http://unusualcoleslaw.blogspot.com/

4 slices of bacon on the base of a dish, add small tin of drained pineapple, some grated cheese. Beat 6 eggs and 1 can of evaporated milk and pour over cheese. Bake for 45 mins. (or until set) in moderate oven.

Source: contributed by Jill Koch in Booleroo Centre Primary School 1885-1985 Centenary Recipe Book (Revised edition 1985 of 1970 edition)

I made a few changes ie sliced the bacon, used fresh pineapple (diced and sauteed in a little butter), 1/2 can of evaporated milk and only 3 eggs. Plenty for 3 people with yummy sourdough toast, Anne

Pineapple Christmas Balls

Thanks for this recipe Wendy! Delicious!

Adapted from: https://www.lordbyronskitchen.com/pineapple-christmas-balls/?fbclid=IwAR0ic66DaLEH3HLodfyxINdvhY8iR4qPTVth3NJonQNMM4PAxth1zmhQ7yc

INGREDIENTS:

1 X 440g can crushed pineapple, very well drained!; 250g cream cheese (I used lactose free); 2 cups desiccated coconut –  use unsweetened coconut otherwise the result might be too sweet; 1 packet of biscuits - crumbled, (I used gluten free shortbread); 1 X  packet pineapple jelly crystals

HOW TO MAKE PINEAPPLE CHRISTMAS BALLS:

1.  Add the room temperature cream cheese to a large bowl. I like to use a mixer to beat the cream cheese. This will help to loosen it up and avoid any lumps of cream cheese in the finished product.

2. Add in the well drained pineapple, one cup of the coconut, the biscuit crumbs, and the packet of pineapple jelly crystals. Just toss the crystals into the bowl with the other ingredients. You do not need to prepare the jelly first.

3. Mix the ingredients well until thoroughly combined. Place bowl in fridge for one hour. Once ready, portion mixture into tablespoons and roll into balls. Roll ball into more coconut.

4. Place finished Pineapple Christmas Balls into a food-safe container. Keep refrigerated.

Wendy added some rum to her Pineapple Christmas Balls, good thinking! Anne

Pineapple finger food

I was inspired by a couple of different recipes for this yummy and easy party food.

Threaded onto the little bamboo skewers are pieces of chicken that were marinated in soy sauce, pineapple juice and oil then lightly fried; pineapple pieces that were lightly oiled then briefly fried; and half pieces of bocconcini balls. I sprinkled my skewers with parsley as that's what I had growing, but chopped fresh coriander or rosemary would be lovely too.

One recipe I found used sticks of trimmed rosemary branches instead of bamboo skewers, Anne

Simple pineapple party treats

A new twist on the retro favorite of pineapple, cheese and a pickled onion on a toothpick!
Pineapple (chopped into chunks, sautéed with a tad of butter and brown sugar), a small basil leaf and a bocconcini on a skewer, totally yum! Anne
The idea came from here:

And these little pre-made pavlovas adorned with cream, sliced pineapple, kiwi fruit and strawberries were very popular at a recent function in our local hall, Anne

Pineapple with Brocciù cheese

(What an unexpected treat! As I couldn’t buy the Corsican cheese, brocciu, locally I replaced it with ricotta. I was quite unsure about the combination of flavors but wow, this was unusual and delicious! Anne)
Serves 4
4 dried pineapple rings; 7 oz (200g) Brocciù cheese; 1 fresh Victoria pineapple; balsamic vinegar; pistachio oil; pepper and sea salt
1 Chop dried pineapple into ¼inch (5mm) cubes.
2 Divide the Brocciù cheese into 4 equal portions. Roll each into a ball in the palm of your hands.
3 Coat the balls with the dried pineapple by rolling them in it.
4 Cover the plate with plastic wrap and arrange the 4 balls on it. Place in the refrigerator.
5 Carefully peel the Victoria pineapple, core it, and cut 4 slices from it, each about ½ inch (1cm) thick
6 Using a piping syringe, on each plate trace 5 lines of balsamic vinegar and 5 parallel lines of pistachio oil. Arrange 1 slice of pineapple and 1 ball of Brocciù cheese on the lines. Season.
