Baked pineapple salmon

Ingredients

Cooking spray, for pan; 17 pineapple rings, fresh or canned ; 1 large salmon fillet (about 3 lbs.); salt; freshly ground black pepper; 3 tbsp. melted butter; 3 tbsp. sweet chili sauce; 2 tbsp. freshly chopped cilantro; 3 cloves garlic, minced; 2 tsp. freshly grated ginger; 2 tsp. toasted sesame oil; 1/2 tsp. crushed red pepper flakes; toasted sesame seeds, for garnish; thinly sliced green onions, for garnish; lime wedges, for serving

Directions

Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. In the center of the foil, lay pineapple slices in an even layer.

Season both sides of the salmon with salt and pepper and place on top of pineapple slices.

In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon fillet.




Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and green onions and serve with lime wedges.

Pineapple Kale Smoothie

Ingredients for 2 servings

2 cups lightly packed chopped kale leaves stems removed; 3/4 cup unsweetened vanilla almond milk or any milk you like; 1 frozen medium banana cut into chunks; 1/4 cup plain non-fat Greek yogurt; 1/4 cup frozen pineapple pieces; 2 tablespoons peanut butter creamy or crunchy; 1 to 3 teaspoons honey to taste

Instructions

Place all ingredients (kale, almond milk, banana, yogurt, pineapple, peanut butter, and honey) in a blender in the order listed.

Blend until smooth. Add more milk as needed to reach desired consistency. Enjoy immediately.

The first pineapple tart

To make a Tart of the Ananas, or Pine-Apple. From Barbadoes.
Take a Pine-Apple, and twist off its Crown: then pare it free from the Knots, and cut it in Slices about half an Inch thick; then stew it with a little Canary wine, or Madera Wine, and some Sugar, till it is thoroughly hot, and it will distribute its Flavour to the Wine much better than any thing we can add to it. When it is as one would have it, take it from the Fire; and when it is cool, put it into a sweet Paste, with its Liquor, and bake it gently a little while, and when it comes from the Oven, pour Cream over it (if you have it) and serve it either hot or cold.

Pineapple truffles

Ingredients:

250g block cream cheese; 1/3 cup sweet coconut condensed milk; 440g can Golden Circle Australian Pineapple Pieces in Juice, well drained; 1 ¾ cups unsweetened desiccated coconut; 375g white chocolate, chopped; ¼ cup toasted coconut flakes, to garnish (I used toasted shredded coconut)

Method:

Place a baking paper lined tray in the freezer to chill.

Add the cream cheese and condensed milk to the bowl of a food processor. Blend until smooth. Add the well-drained Golden Circle Pineapple Pieces and desiccated coconut. Pulse to combine, ensuring there are some small pineapple pieces remaining. Transfer mixture to a bowl and refrigerate for 1 hour, to firm up slightly.

Add the chocolate to a heatproof bowl. Microwave in 30 second bursts, stirring, until completely melted. Roll the chilled truffle mixture into walnut size balls, dipping straight into the melted chocolate. Coat well, and use a fork to remove the truffles, shaking of excess melted chocolate. Transfer truffles to the chilled baking tray, and scatter with toasted coconut while the chocolate is still melted. Repeat to use all the mixture, remelting the white chocolate if it begins to set.

Keep truffles refrigerated until ready to serve.

Healthy pineapple smoothies

Serves 1

¼ pineapple, peeled, cored and chopped; 2 orange carrots; 1 sweet potato, chopped; 1”/3cm piece of fresh ginger

Juice combined ingredients. 

                                                          


Tropical green smoothie

1/2cup frozen pineapple cubes; ¼ cup frozen banana; ¼ cup frozen mango cubes; 1 cup packed fresh spinach leaves; ½ cup unsweetened coconut water; ¼ frozen avocado; 1 scoop vanilla protein powder

Blend combined ingredients.
