1 cup cooked shredded chicken; ½ cup diced pineapple; 1 jalapeño, finely chopped; 1 cup cornmeal; 1 cup all-purpose flour; 1 tbsp sugar; 1 tsp baking powder; ½ tsp salt; 1 egg; 1 cup milk; ¼ cup melted butter; ½ cup shredded cheddar
Preheat oven to 375°F.
Mix cornmeal, flour, sugar, baking powder, and salt. Whisk
egg, milk, and melted butter; combine with dry ingredients. Fold in chicken,
pineapple, jalapeño and cheddar.
Spoon batter into greased muffin tin.
Bake 18–22 minutes until golden. Cool slightly before
serving.
