Pinapalia - beginning and ending with cocktails!



The Whale Watcher, made here by Faith on the Alaskan Dream ship the Baranof - pineapple juice, Bacardi Rum, Blue Curacao and a cherry!

This is a collection of pineapple marvels, many of which were shared with us by family and friends.

The Mary Pickford cocktail

60ml white rum; 40ml pineapple juice; 1 teaspoon Maraschino liqueur; 2 teaspoons grenadine; cherry for garnish

Place the rum, pineapple juice, Maraschino liqueur and grenadine in a cocktail shaker. Add 2 handfuls of ice and shake until cold.

Strain the drink into a cocktail glass. Garnish with a cherry if desired.

Pineapple cocktails III

Non-alcoholic Cocktails: The Australian Mixed Drinks Collection 1994 Jon Carroll et al

Copper Stopper

Mixers: 60ml pineapple juice; 60ml orange juice; dash of cream; 2 dashes Angostura bitters; dry ginger ale; lemonade

Method: Shake all ingredients together except lemonade and ginger ale. Pour into a glass and top-up with lemonade and ginger ale.

Driver’s Delight

Mixers: 60ml orange juice; 30ml pineapple juice; 30ml lemon juice; 15ml sugar syrup; 1 dash Angostura bitters; 1 dash of egg white

Method: Shake all ingredients and strain. Coat rim of glass with Angostura and sugar and garnish with a strawberry.

Milt’s Shake

Mixers: 120ml milk; scoop of ice cream; 60ml pineapple juice; dstpn coconut cream; 1 cup of fresh pineapple pieces

Method: Blend all ingredients and pour into a glass. Top-up with a slice of pineapple or cherry. Enjoy through a straw.

Sunshine

Mixers: 90ml pineapple juice; 30m cream; 30ml coconut cream; 30m sugar syrup; ½ banana; crushed ice (to fill half the glass)

Method: Blend all ingredients with ice until smooth, garnish with a wedge of pineapple and 1 cherry.

Pineapple cocktails II

Non-alcoholic Cocktails: The Australian Mixed Drinks Collection 1994 Jon Carroll et al

Beat the Booze Bus

Mixers: 100ml pineapple juice; 100ml orange juice; 25ml lemon juice; 1 dash grenadine; 1 dash Angostura bitters

Method: Shake over ice and pour. Garnish with pineapple slice, lemon slice, swizzle sticks and straws.

Boo Hoo

Mixers: dash Angostura bitters; 45ml pineapple juice; 45ml dark grape juice; 45ml apple juice

Method: Add dash of Angostura bitters to ice. Pour in juices. Garnish with mixed fruit.

Chilled Rabbit

Mixers: 30ml lemon juice; 30ml lime juice; 30ml pineapple juice; top-up with soda water; 2 scoops vanilla ice cream

Method: Mix juices, top-up with soda water, ice cream. Garnish with cinnamon and chocolate shavings.

Sydneysider

Mixers: 30ml lemon juice; 30ml orange juice; 30ml grapefruit juice; 30ml pineapple juice; 60ml apple juice; ½ egg white; dash Grenadine

Method: Shake with ice and pour. Garnish with an apple fan.

Pineapple Cocktail Hour with Merilyn

I think I'll call this one THE HARRIS FARM SPECIAL. Bought a $2 pineapple this week, so I blended some, added two kinds of rum, triple sec, lime juice and some mint, shake shake shake. It's boozy... I think there are 3 shots of rum and 1/2 a triple sec!

I think the proportions were 60ML pineapple juice (blended pineapple but through a sieve), 45mL aged rum, 45mL white rum, 22.5mL triple sec, the juice of one fat lime (maybe 45ML?), 8 mint leaves, shaken with ice, then strained.

Verdict: Top notch.

Kiss me quick cocktail (with pineapple)

Kiss Me Quick Cocktail


Yields 2
8 Ounces of Fresh Raspberry Sauce; 4 Ounces of Vanilla Cake Vodka; 8 Ounces of Pineapple Juice

Place 4 ounces of the raspberry sauce in each glass, then 2 ounces of the vodka in each glass, then 4 ounces of the pineapple juice in each glass, mix them up and enjoy!

RASPBERRY SAUCE
1 Cup of Granulated Sugar; 2 Cups of Water; 12 Ounces of Fresh Raspberries.

In a medium saucepan, place the water and granulated sugar in it and on medium-high heat mix together until the sugar dissolves.
Now add the raspberries and bring to a boil, then lower the heat and let simmer for 25 minutes.
Remove your saucepan from the heat and strain the raspberry/sugar mixture over a bowl, throw away the fruit from the strainer then place the syrup back into your saucepan.
Simmer the raspberry sauce for 15 more minutes, then strain again, let cool and place into your drink.

Cheers! Seven years of the Pineapple Princesses!

Ann and I launched this tribute blog to Ruby Borrowdale, the home economist behind the Golden Circle Tropical Recipe Book seven years ago today with a recipe for Sweet and Pungent Lamb. 

After cooking our way through the entire book we continued to find pineapple recipes from many different, mostly retro sources. It still provides challenges and amusement so I imagine the Pineapple Princesses may still be going strong with new additions to the approximately 700 recipes already collected in another seven years time, Anne.
   
The Singapore Sling was first created by a bartender at the Raffles Hotel in Singapore




Here, Greg the bartender, mixes up his own delectable version !
"Easy . . . equal parts . . .  I used nip/shot glass.    
One nip gin, one nip pineapple juice, a squeeze of lime and the remainder tonic water . . . pour over ice in shaker.... shake . . . and garnish with a wedge of lime."


Rodney the bartender, at the Penrith Panthers Club, preparing a delicious 'Stormy Monday'  of pineapple juice, a dash of Bitters, Malibu, Southern Comfort and a wedge of pineapple.

Spotting pineapples on Oahu, day 4

Not so many memorable pineapple experiences today, so here's a photo of a complete stranger chillin' in Honolulu, no doubt dreaming of the frozen pineapple rumbo they'll be sipping this evening . . .


Pineapples, Passion Fruit and Poi: Recipes from Hawaii by Mary Lou Gebhard & William H. Butler, Illustrations by Hide Doki, 1967

Frozen Pineapple Rumbo
2 tblsp pineapple juice; 1 tblspn dessert sugar; 1 egg white; 2 tblsp lime juice; 80ml rum; 2 cups shaved ice
Mix in blender until consistency of snow. Serve in chilled 200ml glass.

Spotting pineapples on Oahu, day 3

Today's pineapple encounters were uniquely Hawaiian.
They were spotted from above:
               (The biggest maze in the whole wide world is planted at the                           Dole Pineapple Plantation.)
They were made from coconut palm leaves:

They were sliced and arranged on the edge of plastic cups of Mai Tai:

Molokai Fizz


1 jigger gin; 2 jiggers pineapple juice; 1 egg yolk; sparkling water
Combine gin, egg yolk and pineapple juice in a shaker with a little cracked ice; shake like fury; pour into tall highball glass; add sparkling water to fill.

Spotting pineapples on Oahu, day 2




The Hawaiian word for pineapple = hala kahiki


Today’s highlight was meeting the beautiful Brie, a real Pineapple Princess who grew up on the Hawaiian island of Lana’i.

Brie said “We were plantation kids, everyone worked for Dole. It was like a family. My grandmother worked at the cannery. My Dad was a “luna”, supervisor and driver of the “boom” followed by the gang who would pick the pineapples, twist off the crowns, throw them over their shoulders and the pineapples onto a conveyor belt. The crowns were planted again, up to 4 times. The gangs worked hard and fast, it was competitive. A barge would come to Lana’i twice a week and take pineapples to Oahu. Mum worked in the research department where they developed new types of pineapples, watermelon pineapple and grape pineapple!

At 5am a whistle woke up the whole town because everyone had the same work schedule. At 8pm another whistle said “Time to get to bed, time to sleep.” It was very much a community, Hawaiians, Filipino, Japanese. Music was important, celebrities like Brother Iz, Israel Kamakawiwoʻole, would visit the island.

A pineapple was our school emblem!”

Brie shared a special recipe of Baked Pineapple and Spam (with brown sugar and mustard) with me that I will post on the blog when I’m home and cooking again!

Brie took us on a wonderful drive around Oahu, stopping of course at the Dole Plantation where we sampled the most delicious ice cream and toured around on the Pineapple Express. The train driver tried to talk me into giving her my ice cream! No way!











And there was of course, more pineapple merchandise. Well family, you can all start wondering about your Christmas presents – will it be the pineapple scented hand sanitiser or a giant plush ukulele playing pineapple!

Haleakala Specter    
“Atop Haleakala one may see himself reflected in the rainbow there … Even sober persons can see their reflections there. Let us know what you see after a couple of these” the authors.
50ml rum; 25ml pineapple juice; 12ml lemon juice; ½ tsp brown sugar
Shake without ice. Pour into glass filled with crushed ice. Decorate with slice of orange. Serve in highball glass.
