Pineapple Cheeseball Platter

Ingredients:

500g block of cream cheese, softened; 450g can of crushed pineapple, drained; 1/2 cup  capsicum, chopped; 1 box  crackers; carrot, zucchini, celery, capsicum slices for dipping

Instructions:

Mix everything except the crackers in a medium sized bowl until it's smooth. 

Spoon the mixture out onto a platter in a pineapple shape. Press crackers into the cream cheese mixture in rows starting from the bottom until you reach the top. 

Add a pineapple top and rest of platter ingredients.

Pineapple and Pistachio Dip

Thanks for this link Cassie, it was delicious as a sweet dip and I think it would also make a great cake topping or filling mmmmm. I couldn't buy the Jello pistachio pudding in Australia and postage was too much . . . so I just had to wait til I visited a Walmart in Honolulu (that was tough)!! Anne


Pistachio Pineapple Dip

Ingredients:
1 (8 oz.) package cream cheese, softened; 1 c. crushed pineapple with juice; ½ c. vanilla yogurt (Greek or regular); 1 (3 oz.) package pistachio pudding; ¼ c. toasted coconut, plus more to sprinkle on top

Instructions:
1.Combine cream cheese, crushed pineapple with juice, yogurt, and pistachio pudding mix in medium mixing bowl and blend on high speed until smooth and creamy (or I just thoroughly stirred mine together)
2.If dip is too thick, add more pineapple juice to desired consistency.
3.Stir in ¼ c. toasted coconut.
4.Spoon into serving bowl; top with additional toasted coconut.
5.Serve with fruit, crackers, or cookies.

Pineapple Pecan Cheese Ball

“This Pineapple Pecan Cheese Ball is a simple, savory appetizer with a slight hint of pineapple sweetness.” Lizzy T

Ingredients: 16 oz cream cheese softened; 8 ounces crushed pineapple (1 small can) drained; 2 tablespoons finely chopped onion; dash of garlic salt; 1 cup finely chopped pecans

Crackers

Instructions:

Mix all of the ingredients together (minus the pecans) in a small bowl. Refrigerate for one hour. 

After refrigerating, press the cheese mixture into a ball, then roll the ball in finely chopped pecans. 

Wrap the ball in plastic wrap and refrigerate until serving. Serve with crackers.

Yeoval and Pineapple

Yeoval is a wonderful little town in Central Western NSW where we lived for several years, Anne.
Chicken Waldorf Salad    

Ingredients:
1 ½ cup chopped chicken; ½ cup chopped celery; ½ cup chopped walnuts; ½ cup sour cream; 2 tblspns French Dressing; 1 tin pineapple pieces; ½ cup chopped apples; ½ cup chopped capsicum; ¼ cup mayonnaise; salt and pepper (May also be added: raisins, finely shredded cabbage).

Method:
Mix well, cover and chill. Best made day before. Serve on lettuce leaves.



 

Minted Pineapple Dip    

Ingredients:
250g cream cheese; 1 cup crushed drained pineapple; ¼ cup finely chopped mint & season to taste.
Method:
Combine all ingredients in blender.

Take a dip


Neither Ann nor I have been able to buy any Golden Circle Sweet-Sour Sauce so I’m guessing it’s not on the market anymore. So this is another brand. The beetroot and sweet potato crisps were totally yum! Anne.

Sweet-Sour Savoury Dip

Place contents of jar Golden Circle Sweet-Sour Sauce in one or two small bowls in centre of savoury tray. Surround with potato flakes, cracker biscuits, toast points and cubes of cheese on sticks.
