Sweet pineapple


We have a new lolly shop in our town (Dungog NSW) and guess what?
There are pineapple products on sale! Lollies and drinks.

These are great crushed and sprinkled on cake icing.

Pineapple Party Punch

Adapted from Party Prescriptions, compiled for your pleasure: All proceeds 1st Red Hill Scout Group Building Fund, Canberra 1963 

Fruit Punch

1 1/2 cups water; 1 1/2 cups sugar; 2 cups cold strained tea; 1 cup pineapple juice; 1 cup orange juice; 6 whole cloves; juice of 3 lemons

To serve: Boil sugar and water for 10 minutes. Cool and add other ingredients. Allow to stand for one hour. Dip the rims of glasses in a little orange or lemon juice, then in crystal sugar to give frosted appearance. Serve punch in glasses with chipped ice,

Juice up a pineapple, or two

Pineapple Grapefruit Juice 

Makes 1 serving, 210ml

“This recipe calls for real pineapple … combined with grapefruits to form a sweet tangy tropical union … this drink can be a vitamin ritual morning, noon, and evening”, the authors.

¼ pineapple, peeled, cored and cut to fit feed tube; 1 grapefruit, rind removed and sectioned, or 1/3 cup reamed grapefruit juice; 1 tsp sugar, or handful of grapes, processed (optional)

Extract juice and add sugar, if desired. Pour over ice and serve.


Pineapple Smoothie

Makes 2 servings, 150ml each

1 cup pineapple juice (about ½ pineapple, rind and core removed); 1 ripe banana, peeled and cut in pieces; 3 tblsp powdered non-fat milk; ½ cup crushed ice; 1 tblsp protein powder (optional)

Blend all ingredients in blender or whip with an immersion blender

Pineapple and Turmeric Smoothie
 
"Bright, sweet and invigorating, this smoothie packs an anti-inflammatory punch."
Serves: 2
Prep time: 5 minutes (plus 4 hours freezing time if using fresh pineapple)

Ingredients: 1 cup pineapple chunks, frozen; ½ teaspoon turmeric powder; ¼ teaspoon cinnamon; ¼ teaspoon ginger powder; pinch ground cloves; 1 cup green tea or coconut water, chilled
 
Method:
1. Place all ingredients in a blender and process until slushy. Divide between two glasses and serve.
