PINEAPPLE COLESLAW
INGREDIENTS
1/2 Small Head Green Cabbage, shredded (about 4–5 cups); 1/2
Red Onion, diced; 2 Jalapeños, diced and seeds removed; 1 cup Shredded Carrot; 1
1/2 cup Fresh Pineapple, diced into 1/4” cubes; 1/2 bunch Cilantro, stems and
leaves finely chopped; Juice of 1 Lime; 3 tbsp White Vinegar; 1 tsp Salt
INSTRUCTIONS
Wash, Chop, and prep all of the vegetables.
Combine all ingredients in a large bowl, and mix until
everything is well incorporated.
Serve as desired; you can serve this immediately, but it is
best chilled. I would recommend storing it in the fridge for at least 3 hours,
preferably overnight.
I couldn’t access all the right ingredients … red onion, jalapeños or cilantro . . . so I mixed in chopped red pepper
and parsley instead, it was delicious with cold roast lamb and a sprinkling of
chili flakes, Anne
